Once cool, consider melting white chocolate or almond bark and drizzling the white chocolate over the apples in an attractive manner. Baker’s note: Don’t cook either the caramel or chocolate coating. Cooking will change the consistency; it only needs to melt. If the coating seems too thin, it’s too hot. Remove the pan from the heat and let it cool. If the coating is not adhering properly to the apple, it is too cool. Heat the topping further. The coatings will set up faster in the refrigerator.

Roll the dough into two logs in wax paper with the logs being about 1 3/4 inches in diameter. Refrigerate the logs for a couple hours. Slice the logs into 3/8-inch thick slices with a sharp, serrated knife. Place the slices on a greased baking sheet, and bake for ten to twelve minutes at 350 degrees. Remove the cookies to a wire rack to cool.
